David Brito

Although Chef David Brito has worked under two James Beard chefs, and now leads one of Phoenix’s most iconic restaurants, he says he never planned on being a chef. A California native and proud Mexican-American, his only connection to the restaurant industry was an uncle who served tables at the Olive Garden. But after watching the “Iron Chef” TV series, Brito unearthed an insatiable desire to learn everything he could about cooking, and especially the fading art of traditional fine dining, and he wasn’t going to let his youthfulness or lack of connections stop him.

Starting his career as a line cook under former ‘Iron Chef’ Alex Stratta (Best Chef: SW 1998) and now working alongside Chef Christopher Gross (Best Chef: SW 1995), Brito has embraced both the old school (brigade de cuisine structure to ensure consistent perfections), while also embracing the new and fresh. He’s as comfortable with a donabe as a demi-glace, and seamlessly mixes imported ingredients alongside foods foraged from the wilds of Arizona. Most important, Chef Brito is passionate about hospitality, and consistently pushing for perfection.
